While everyone else is going gah-gah for pumpkin spice lattes, I've always been one to patiently wait for peppermint mocha season. And it's finally here! So naturally I had to make my own nourishing version.
Y'all know my Bulletproof Superfood Coffee Creamer recipe is more than just a daily ritual for me. It's a time-saver and a game-changer and it makes me feel amazing; I hate going even a day without it. (And thousands of y'all have loved it too!) This recipe has all the same fat-blasting and energy-boosting power but with a holiday twist. Ingredients
- 2 cans full fat coconut milk
- 8 scoops collagen peptides
- 1 tbsp himalayan pink salt ghee
- 3 tbsp ghee, original
- 2 tbsp MCT oil
- 2 tbsp cacao powder
- 2 tbsp cocoa powder
- 2 tsp maca powder
- 12 drops peppermint essential oil
Optional
- 1/2 tbsp maple syrup
Instructions
- Pour coconut milk in a small pot and warm over low heat on stovetop. Fat and liquid are likely separated, so warm and stir to mix evenly.
- Add collagen peptides and stir until dissolved.
- Add ghee and MCT oil. Continue to melt and stir.
- Add cacao, cocoa, maca and peppermint. Stir.
- Pour contents into a blender or use immersion blender straight in the pot. Blend 2 minutes.
- Transport to storage bottle and shake. Allow it to cool on the counter while shaking periodically, then store in fridge.
Just like my Bulletproof Superfood Coffee Creamer, this is perfect for pouring into a hot cup of coffee in the morning and simply frothing up with the magic of a handheld milk frother (I've since upgraded to this one from Amazon).

mollie, you use cacao and cocoa in this recipe… I only have cacao powder can I substitute or does the cocoa make a big difference?
Great question, Brooke! You can definitely use 4 tbsp of the cacao powder instead. I use both because they have different flavor – because the cocoa is alkalinized, it is less bitter. But the cacao powder has more antioxidants so you’ll get more nutrients that way. I would just taste test to see if it needs any sweetener.
What is the equivalent measurement for 8 scoops of collagen? Mine doesn’t have a scoop.

i just made this recipe this weekend and had it in my coffee this morning and holy smokes mollie it is sooo good. it’s creamy and perfectly sweet and kept me full til lunch. christmas in a cup, indeed.

Does this solidify in the refrigerator?
Hey Heather, thanks for your question. It will depend on which type of ingredients you use. If you use the full fat canned coconut milk with no added guar gums as separators, it will likely clump a little (as fats harden at cold temps). All I do is run my glass bottle under a little hot water, shake it up, and it’s easy to pour.
