Peppermint Mocha Bulletproof Coffee Creamer

November 13, 2017

While everyone else is going gah-gah for pumpkin spice lattes, I’ve always been one to patiently wait for peppermint mocha season. And it’s finally here! So naturally I had to make my own nourishing version.

Y’all know my Bulletproof Superfood Coffee Creamer recipe is more than just a daily ritual for me. It’s a time-saver and a game-changer and it makes me feel amazing; I hate going even a day without it. (And thousands of y’all have loved it too!) This recipe has all the same fat-blasting and energy-boosting power but with a holiday twist. Click here to read why I incorporated each of these ingredients and how it helps curb cravings and promote fat loss.

Peppermint Mocha Bulletproof Coffee Creamer

  • 2 cans full fat coconut milk
  • 8 scoops collagen peptides
  • 1 tbsp himalayan pink salt ghee
  • 3 tbsp ghee
  • 2 tbsp MCT oil
  • 2 tbsp cacao powder
  • 2 tbsp cocoa powder
  • 2 tsp maca powder
  • 12 drops peppermint essential oil

Optional

  • 1/2 tbsp maple syrup
  1. Pour coconut milk in a small pot and warm over low heat on stovetop. Fat and liquid are likely separated, so warm and stir to mix evenly.

  2. Add collagen peptides and stir until dissolved.

  3. Add ghee and MCT oil. Continue to melt and stir.

  4. Add cacao, cocoa, maca and peppermint. Stir.

  5. Pour contents into a blender or use immersion blender straight in the pot. Blend 2 minutes.

  6. Transport to storage bottle and shake. Allow it to cool on the counter while shaking periodically, then store in fridge.

Just like my Bulletproof Superfood Coffee Creamer, this is perfect for pouring into a hot cup of coffee in the morning and simply frothing up with the milk frother.

The ingredients:

And the tools I love for this one: (I use my immersion blender straight in the pot, just keeps clean up easier)

It’s like Christmas in a cup! Whip this recipe up and you’ll be sippin on some healthy holiday cheer every morning.

xoxo, Mollie Mason

I am not a pumpkin spice latte person either. I have been wanting to try bullet proof coffee but I am a little scared as it goes against my regular way of eating. #dilemmas

mollie, you use cacao and cocoa in this recipe… I only have cacao powder can I substitute or does the cocoa make a big difference?

    • Reply Mollie Mason November 26, 2017 at 6:46 pm

Great question, Brooke! You can definitely use 4 tbsp of the cacao powder instead. I use both because they have different flavor – because the cocoa is alkalinized, it is less bitter. But the cacao powder has more antioxidants so you’ll get more nutrients that way. I would just taste test to see if it needs any sweetener.

What is the equivalent measurement for 8 scoops of collagen? Mine doesn’t have a scoop.

    • Reply Mollie Mason December 1, 2017 at 5:36 pm

Sarah, it’s about 8 tbsp worth. Hope you enjoy!

  • Reply Heather Valdes December 7, 2017 at 10:42 am

Does this solidify in the refrigerator?

    • Reply Mollie Mason December 7, 2017 at 3:54 pm

Hey Heather, thanks for your question. It will depend on which type of ingredients you use. If you use the full fat canned coconut milk with no added guar gums as separators, it will likely clump a little (as fats harden at cold temps). All I do is run my glass bottle under a little hot water, shake it up, and it’s easy to pour.
